Serves 10 people
For the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
To make the Cocktail (makes 850ml, serving 10)
400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish
Method
Making the Citrus Syrup: Combine the listed items inside a saucepan, heat until it reaches a simmer, stirring until the sugar dissolves. Then, remove from the stove allowing it to cool entirely. Decant to a sealable bottle, cap it keeping it in the fridge, it will last for around a month.
Preparing the Premix: Combine all the spirits and syrup in a large bottle, allow it to infuse for an hour, then strain best through a fine cloth, to ensure it's completely strained.
For serving: Add 85ml from the batch mix to a stirring glass containing ice, and stir carefully for one minute to chill. Filter to a cold coupe glass or equivalent, garnish with the cranberries and finish with a brief mist of the essential oil over the drink.
